Prior to trying this made-up recipe on a whim, I always refused sweet potatoes. My only sightings of sweet potatoes in my younger years involved Thanksgiving and marshmallows. Not my idea of deliciousness.
So tasty and super easy.
- 1 sweet potato or more as desired
- olive oil
- assorted spices
- paring knife
- cookie sheet
Preheat oven to 400°F. Cover cookie sheet with foil to minimize the mess and make clean-up a breeze. Rinse and peel sweet potato/es. Slice sweet potato/es into rounds and arrange on foil covered cookie sheet – no touching! Drizzle olive oil over the rounds and season. Bake for 15 minutes. Flip and bake for an additional 5-15 minutes as desired.
One large sweet potato makes a delicious small meal for me. One can also make a good side dish to share with another. Personally, I think the perfect ratio is one sweet potato per person.
